3 Delicious Seafood Recipes

Summer is the perfect time to enjoy delicious seafood. While many of the entrees you enjoy at your favorite restaurant taste like a lot of work was involved in the preparation, you can actually learn to create some fabulous seafood meals at home. Here are three recipes to try out the next time you get a craving.

1. Bourbon-Glazed Salmon

A combination of sweet and smoky flavors make Bourbon-Glazed Salmon a tasty meal. Salmon is also a healthy choice with its high Omega-3 content.

Servings: 4

3 tablespoons brown sugar
3 tablespoons bourbon
2 tablespoons soy sauce
1 tablespoon grated peeled fresh ginger
1 tablespoon fresh lime juice
3 minced garlic cloves
¼ teaspoon ground black pepper
4 (6-ounce) skinless salmon fillets
Cooking spray
¼ cup thinly sliced green onions
1 tablespoon toasted sesame seeds

Combine the first seven ingredients in a large zipped plastic bag. Add the fish to the bag and close tightly. Marinate in the refrigerator 1 ½ hours, turning occasionally.

Heat a large nonstick skillet over medium-high heat. Coat the pan with cooking spray to avoid sticking. Place fish in pan and cover with marinade.

Cook the salmon four minutes for each side or until it flakes when you use a fork. Remove the salmon and place on plate. Drizzle small amount of sauce on top and sprinkle with green onions and sesame seeds.

2. Grilled Halibut with Peach and Pepper Salsa

Spicy and sweet flavors make this recipe a winner for summer dining. Halibut is a popular favorite among fish lovers because it has a firm texture and tasty white meat.
Start to Finish: 40 minutes

Servings: 4

For the Salsa:

1 1/3 cups coarsely chopped peeled peaches
1 cup chopped red bell pepper
1/3 cup thinly sliced green onions
1/3 cup chopped fresh arugula
¼ cup fresh lemon juice
4 teaspoons chopped fresh oregano
1/8 teaspoon salt
½ habanero pepper, minced with no seeds
1 minced garlic clove

For Fish:

4 teaspoons fresh lemon juice
4 teaspoons olive oil
½ teaspoon paprika
1 minced garlic clove
4 (6-ounce) skinless halibut fillets
1/3 teaspoon salt
1/3 teaspoon black pepper
Cooking spray

Combine the first nine ingredients for the salsa and toss gently. Let stand for 30 minutes before ready to serve.

Heat up grill to medium-high. Combine 4 teaspoons juice, oil, paprika and one garlic clove in a large baking dish. Stir with a whisk.

Add the fish to the mixture and turn to coat entire fillet. Cover and let sit for 15 minutes.

Remove the fish from the marinade and sprinkle with salt and black pepper. Cook on grill that has been coated with cooking spray. Cook for three minutes per side or until desired doneness. Serve on plate with salsa.

3. Lemon Pepper Shrimp Scampi

Shrimp scampi is a popular restaurant item, and this recipe is simple enough to make at home. It only takes eight ingredients and a few minutes of your time to have a delicious meal ready.

Servings: 4

1 cup uncooked orzo
2 tablespoons chopped fresh parsley
½ teaspoon salt
7 teaspoons unsalted butter
1 ½ pounds peeled and deveined jumbo shrimp
2 teaspoons minced garlic
2 tablespoons fresh lemon juice
¼ teaspoon ground black pepper

Cook orzo according to directions on package, but leave out salt and fat. Drain. Place it in a medium bowl and stir in parsley and ¼ teaspoon of salt. Cover to keep it warm. Melt one tablespoon butter in a large nonstick skillet over medium-high heat. Sprinkle shrimp with the rest of the salt. Add half of the shrimp to pan and sauté for about two minutes or until almost done. Place shrimp on a plate. Melt one tablespoon of butter in the pan and add remaining shrimp. Sauté for two minutes and place on plate.

Melt one tablespoon butter in the pan, and add garlic. Cook for 30 seconds while stirring constantly. Stir in shrimp, juice and pepper and cook for one minute. Remove from pan and place on bed or orzo on a plate to serve.
